I wanted to keep this dishes basic, clean and to the point. I had so many ideas for this and I decided to just take it easy. Since Avocados have a very mild taste I didn’t want to mask the flavor. The avocado and Papaya were the mild elements in the dish, played up with a little lime juice, with the passion fruit syrup being sweet and sour and the jalapeno adding a subtle hint of heat. I almost wished that I had some sous vide equipment.
